In the past, I have used Illustrator to mimic a low poly rendering by creating triangles and transforming them into perspective, and with the help of the right colors, I was able to achieve an artwork with the looks of a low poly rendering but a more unrealistic stylized look. Here I am using Blender to make my first low poly rendering.
